Are you a Peach Enthusiast?

Look in your Merriam-Webster dictionary for an interesting explanation of what it means to be an enthusiast:

A person filled with enthusiasm such as: 

*one who is ardently attached to a cause, object or pursuit

*one who tends to become ardently absorbed in an interest

For me, the definition was best realized when coming home from our local Farmer’s Market at the height of peach season with, yet another, basket of ripe, fresh, flavorful east Texas peaches. And then to land on one exceptionally versatile recipe using this year’s crop was a special treat.

Peach Honey Vinaigrette

Peach Honey Dijon Balsamic Vinaigrette was the newly discovered recipe. Over the past two weeks, I’ve made it at least three times, doubling the recipe each time. We’ve enjoyed it over summer salads, roasted corn, okra and green beans and as a marinade for fresh tomatoes.

It was also finger-licking yummy over cheese toast topped with grilled peach slices and chopped cinnamon basil. One morning, it was even drizzled over a bowl of creamy yogurt!

Hope you will be enthusiastic about trying a few of these suggestions for celebrating the juicy, luscious, sun-kissed delights found in what is best described as nature’s summer candy.

Peach Honey Vinaigrette

*Note: When making the vinaigrette, use soft, ripe peaches. Add the fresh thyme when ready to serve.
